A delicious Guinea-fowl Fricassee prepared with guinea-fowl legs and Paris mushrooms simmered in a cream and white wine sauce – serves three good appetites or four smaller appetites.
The meat is tender and tasty and the wine sauce has deep, well balanced and superb flavour.
Simply warm up in an oven (180g for 20 minutes) and serve with either boiled potatoes or fresh egg tagliatelle.
