We have tried many goose foie gras over the years, and would rate this whole goose foie gras prepared for us by Edouard Artzner in Strasbourg as one of the finest examples we have tried with near perfect flavour and texture.
Edouard Artzner are one of France’s oldest and most reputed foie gras producers and give this whole goose foie gras their 5* rating – their highest grade.
Goose foie gras entier (whole goose foie gras) is fully cooked, seasoned and ready to eat – the “whole” refers to the fact these foie gras are made with best quality whole foie gras lobes.
Foie gras is best enjoyed served cool, finely sliced, with a sauternes wine jelly or fig chutney on some lightly toasted bread (again finely sliced). You may also be interested to read our blog post about how to serve, eat and store foie gras.
