This recipe is unique to Conserverie Courtin (based in Concarneau in Brittany) and prepared with scallops gently cooked in Brittany butter seasoned with bread crumbs and shallots … the result is something simply delicious and a very delicate flavour – even when you open the tin the smell of scallop hits you and the flavour (scallop all the way!) and texture are superb.
At its’ best we feel enjoyed tepid (or just at room temperature) on some toast, accompanied by a side salad. You can also add one tin to pasta sauce and you get a very delicate flavour.
Another way to enjoy it is fill 2 small scallop shells (if you have these) with the confit de St Jacques, add some bread crumbs, and warm gently in an oven and serve warm.
Serves two as a light starter as eve though the tins are small, it’s surprisingly rich – presented in easy to open tin.
Scallops (59%), fresh brittany butter (13%), fresh onions, bread, water, salt, pepper.
Store in a cupboard up to 3 years. Once open store in a fridge 0-4c, and consume within 2 days.
