One of the better sevrugas we have tried with excellent taste and creaminess.
This Sevruga has small, softish eggs as you would expect from a Sevruga but it has better egg definition than most. They are medium grey in colour and full of flavour.
We have not stocked any Sevruga for quite some time. Good Sevruga is always hard to find. It is not a favourite for the farms as it is relatively small and so not great for meat production.
We have now sourced this caviar from a relatively new farm in Romania. This caviar is from the Stellatus Sturgeon – true Sevruga.
Try it along side one of our other caviars and you will really taste, and feel, the difference. It is ideal for serving with the traditional accompaniments and for canapes as a small quantity gives a flavour that stands up well with other ingredients.

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.

Please note that all caviar products should be refrigerated upon receipt. Once opened, consume within 48 hours. Caviar can be stored in a domestic fridge from -2c to +4c (the colder and closer to 0c the better!) 4 weeks and more. When storing caviar in your fridge, it is important to store it at the back of the fridge on the bottom shelf where it is coolest and temperature does not fluctuate.
