Just occasionally, we come across a caviar that we simply have to offer. The Black River Farm is world renown and is deemed to be very much the No1 farm in the Americas. When we tasted the caviars, we simply had to stock so we now have an exclusive import deal with Black River and now offer its Imperial Oscietra – top of the range.

The Black River farm was founded in the early 1990s and was the first sturgeon farm in the southern hemisphere. Using brood stock originally sourced from the Caspian Sea, the farm only produes Oscietra. It is located in a remote, pristine , environment where it “wild farms” the sturgeon. For the first four years of their lives, the young sturgeon swim freely in netted enclusers in Lake Baygorria, a dammed section of the Rio Negro. Therafter, they are introduced to “raceway basins” where they live as if in a natural river. 50 million gallons of water flow through the basins daily.

The farm only produces c4 tonnes of caviar annually and is happy to focus on quality rather than quantity. It produces three grades of Oscietra. We are currently only importing the top grade: Imperial.

The eggs are large (3-3.2mm) and exceptionally well defined. The colour varies from brown through to almost light grey. The eggs are firm with a rich, buttery flavour.

How best to enjoy your caviar?

1. Eat a little on a spoon to enjoy the taste in it’s purest form!

2. Add a little to a blini, with butter or sour cream and chives – makes a great canape.

3. Can be enjoyed on toasted dark rye bread with scrambled eggs.

4. Traditionally drinks to accompany caviar include chilled vodka or champagne.

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.

Storage

Please note that all caviar products should be refrigerated upon receipt. Once opened, consume within 48 hours. Royal Beluga caviar can be stored in a domestic fridge from -3C to +3c. When storing beluga caviar in your fridge, it is important to store it at the back of the fridge on the bottom shelf where it is coolest and temperature does not fluctuate.
