Method

1. Warm the Duck Confit

Place the unopened tin in warm water for around 15 minutes to soften the duck fat.

Remove the duck legs and reserve some of the fat.


2. Shred the Meat

Remove and discard the skin and bones.

Using two forks, gently shred the duck meat into fine strands.

Traditional rillettes should be textured rather than smooth.


3. Mix the Rillettes

Place the shredded duck into a bowl.
