Foie Gras De Canard Entier

There is some confusion as to what foie gras “entier” (literally whole in English) means. In foie gras terminology, foie gras entier means that the whole and best quality foie gras lobes are used to prepare them – rather than the foie gras en bloc variety, where smaller pieces of liver are used and emulsified to create a smoother foie gras. So in essence, foie gras entier taste a little better and the texture is buttery and very enjoyable indeed. The pinnacle of foie gras.
