Duck Confit Rillettes Recipe – A Classic French Starter
Rich, moorish, and packed with flavour, duck confit rillettes are one of the easiest and most rewarding French dishes to make at home. By combining tender duck confit with a little of its cooking fat, you can create a luxurious pâté-style spread that is perfect for entertaining, picnics, drinks parties, or a traditional French starter.
This recipe is ideal for using French duck confit from Castelnaudary and transforms a simple tin of confit de canard into an impressive bistro-style dish.
Place the unopened tin in warm water for around 15 minutes to soften the duck fat.
Remove the duck legs and reserve some of the fat.
2. Shred the Meat
Remove and discard the skin and bones.
Using two forks, gently shred the duck meat into fine strands.
Traditional rillettes should be textured rather than smooth.
3. Mix the Rillettes
Place the shredded duck into a bowl.
Add:
2–3 tablespoons reserved duck fat
Shallot
Parsley
Dijon mustard (if using)
Black pepper
Mix thoroughly until the duck becomes moist and spreadable.
Taste and adjust seasoning if needed.
4. Chill
Transfer to a serving dish or ramekins.
Press down lightly with the back of a spoon.
For longer storage, cover the surface with a thin layer of melted duck fat.
Refrigerate for at least 2 hours.
