An exceptional expression of Spanish charcuterie, Lomo Doblado is crafted from pure-bred, acorn-fed Ibérico pigs that roam the dehesa woodlands of south-western Spain. Made exclusively from the tenderloin of 100% Ibérico de Bellota pigs, it is widely regarded as one of the most refined cured meats produced in Spain.

Following a traditional Extremaduran recipe revived by Señorío de Montanera, this artisan delicacy is made without paprika, allowing the remarkable quality of the meat to take centre stage. The whole loin is folded in half (“doblado”), coated in lard, and slowly cured to develop extraordinary depth, tenderness, and purity of flavour.

Based in Badajoz, Extremadura, Señorío de Montanera was founded by a collective of Ibérico pig breeders committed to overseeing every stage of production—from free-range rearing to final cure. They specialise in DOP-certified, acorn-fed Ibérico hams and charcuterie of the highest distinction.
