This DOP Extremadura Ibérico de bellota ham is made from animals that have fattened on acorns for 10 -12 weeks on the local dehesa and have then been cured in Badajoz for more than 3 years.
The end result is a superb, succulent ham with an intense savoury aroma, a complex mature flavours that combines sweet nuttiness with a salty depth and has a long, deep, lingering aftertaste. Both the flavour and texture are just magnificent! Even the fat tastes good.
Señorio de Montanera is a company, based in Badajoz, Extremadura, which was founded by a group of Ibérico pig breeders.Their aim was to create a business that would control each step of the process of producing Ibérico ham, from birth to the final product. They specialise in the production of DOP, acorn fed hams.
Iberico ham is best served at room temperature (around 20c), like that the fat in the ham starts to soften giving it a yielding texture and the flavours really open up.
If stored in a fridge, take the packet out 90 minutes ahead, and 10 minutes prior to serving open the packet and peel apart the slices. Please note this is almost impossible to do from cold.
The flavour is so good, we would recommend just enjoying it on it’s own. It’s a little like caviar in that respect, you are best off just enjoying the taste in it’s purest form!
