Very enjoyable and similar to the well known duck rillettes – fritons are made with duck meat and duck fat and deliciously spreadable.
Seasoned with the highly reputed pink Lautrec garlic to give and extra flavour dimension, these are delicious on warm toast or baguette.
Prepared by Castaing in the Landes region of South West France.
