Some caviars demand attention—this is one of them. We are proud to offer Imperial Oscietra from Black River Caviar, widely regarded as the finest sturgeon farm in the Americas and a global benchmark for quality.

Why Black River?

Founded in the early 1990s, Black River was the first sturgeon farm in the southern hemisphere. Using broodstock originally sourced from the Caspian Sea, the farm focuses exclusively on Oscietra.

Set in a remote, pristine environment in Uruguay, the sturgeon are “wild farmed.” For their first four years, they swim freely in netted enclosures in Lake Baygorria, part of the Río Negro. They are then transferred to flowing raceway basins designed to replicate natural river conditions, with 50 million gallons of fresh water passing through daily.

Production is deliberately limited to just four tonnes per year, with an uncompromising focus on quality over quantity.

Why Imperial Grade?

Black River produces three grades of Oscietra. We import only the highest: Imperial.

Ingredients

Sturgeon roe (fish), salt, preservative: E285 (borax).

What is borax?
Borax (sodium borate) is a traditional caviar preservative. It helps maintain texture, stability, and enhances flavour.

Storage

Please note that all caviar products should be refrigerated upon receipt. Once opened, consume within 48 hours. Royal Beluga caviar can be stored in a domestic fridge from -3C to +3c. When storing beluga caviar in your fridge, it is important to store it at the back of the fridge on the bottom shelf where it is coolest and temperature does not fluctuate.
