A high quality goose foie gras “entier” (the best grade available) mi – cuit prepared for us by Edouard Artzner foie gras in Strasbourg with 5% of whole black truffle slices.
Foie gras mi-cuit have been cooked less than the fully preserved foie gras and have a slightly fuller flavour, which connoisseurs generally prefer.
The depth of taste and texture of this foie gras are superlatively good and the layers of black truffle slices adds another taste dimension to this excellent foie gras.
Makes a very special starter for 4 for special occasions and an exceptional foie gras.
If you want to enjoy foie gras at it’s very best, we recommend enjoying it cool (remove from fridge 10 minutes prior to serving) on some finely sliced good quality bread (toasted or untoasted), a few salt crystals/ fresh or dried figs or a chutney/ wine jelly of your choice.
