Today, our bestselling House Selection Caviar comes from one of the oldest and most respected outdoor sturgeon farms in Italy, established in 1997. Located in northern Italy, this flow-through farm specialises in premium pure Siberian Sturgeon (Baerii) caviar, sustainably farmed using advanced aquaculture techniques. This is a different farm from the one producing our Oscietra and Royal Beluga caviar, allowing us to offer a unique flavour profile and outstanding value.

This premium Baerii caviar features medium-to-large pearls similar in size to Oscietra caviar, with a darker appearance ranging from deep charcoal to black.
