About this product
We introduced the House Selection label over 10 years ago. The idea being that we seek out caviar of exceptional price/quality whatever it may be. If we find one better than what we have, we upgrade, which we have done several times now.
We are very fortunate to be able to source our current House selection from the oldest outdoor farm in Italy, which had its first production in 1997. The flow-through farm is in northern Italy but it is not the same farm that produces our Oscietra and Royal Beluga. The caviar is from pure Siberian (Baerii) sturgeon and it is really very good indeed.
The eggs are similar in size to Oscietra, but are rather darker in colour, some verging towards black. This caviar has very good egg definition and a tremendous front-of-mouth flavour so is ideally suited to canapes but is also well suited to being enjoyed at leisure.
