Cooking Preparation Tips
Rehydrating dried porcini is simple:
- Place the mushrooms in a bowl.
- Cover with tepid water.
- Leave to soak for approximately 45 minutes.
- Carefully rinse the mushrooms several times to remove any natural grit.
- Drain and cook as desired.
- Keep the soaking liquid – it is packed with mushroom flavour. Allow any sediment to settle, then carefully pour off the liquid and add it to risottos, sauces, soups, gravies, and stews for even more depth and richness.
Once rehydrated, porcini mushrooms can be:
- Sautéed with garlic, parsley, and butter
- Stirred into risotto
- Added to creamy pasta sauces
- Used in beef bourguignon and slow-cooked stews
- Blended into mushroom soups
- Added to stuffing recipes
- Combined with wild mushrooms for gourmet dishes
- Used to enrich stocks, gravies, and braising liquids
