Enchaud is a genuine Perigordian recipe: fillet of pork seasoned with garlic, salt and pepper – the texture and flavour are just superb and akin to a well seasoned pork roast or Porchetta. Some of the stock from the cooking process collects at the bottom of each jar, and this is perhaps the best part of the dish!
One jar will serve 3 very comfortably – and four moderate appetites without a problem as it is very nourishing indeed!
Enchaud should be sliced and served at room temperature with a side salad. We also feel this would work well with a potato salad or French fries.
