Cooked Fillet Of Pork From Perigord
We know French food well (or so we think!), but this was a new speciality to us! And the result? In pork specialities, it is one of the tastiest dishes we have tried … it is succulent!
One jar will serve 2.
Enchaud is a genuine Perigordian recipe: a fillet of pork seasoned with garlic, salt and pepper – the texture and flavour are just superb and akin to a heavily seasoned pork roast or Porchetta.
It should be sliced and served cold with gherkins and a salad with walnut oil dressing. We also feel this would work well with a potato salad.
You can also warm the contents up very gently in a saucepan so that it is warm (rather than hot) – and enjoy!
