Perard Lobster Soup Serves 2/3
Perard lobster soup is reputed France wide for it’s quality and flavour.
Makes a delicious starter for three or main course for two and ideal to serve when entertaining.
Best enjoyed with croutons (try rubbing a clove of garlic into them for even more flavour) and rouille.
Another way to enjoy this soup is to add a little fresh cream prior to serving to give it a certain veloute.
You can also make a sort of bouillabaisse by adding pieces of white fish, prawns and mussels as you warm your soup!
Can be stored 2 years at room temperature.
Cooking Preparation Tips
Simple requires warming gently in a saucepan and goes well with fried bread croutons rubbed with fresh garlic and rouille.
