Cooking Preparation Tips

Oven chips: Par-boil potatoes wedges for 5 minutes and then roast them for 30 minutes until crisp and golden.

Frying onions: heat a little goose fat over high heat, then add the onions and cook over a low heat until the onions are softened and golden.

Toast and dripping: spread goose fat on thick slices of toast.

Fried bread: Melt a little goose fat in a frying pan, add a thin slice of bread and fry both sides until golden.

Fried eggs and omelettes: same as for bread but use eggs.

Dumplings: When made with goose fat, dumplings become lighter in texture.

Home Made Duck confit: the French way of preserving duck in duck or goose fat. You can also use goose fat to prepare rillettes, French pates and cassoulet.

Roasting poultry and game: baste your poultry with goose fat and then cook in oven.

Stuffings: use goose fat to stir your stuffing ingredients.
