We’ve just received our third batch of fresh black Winter truffles (tuber melanosporum) of the season from France. We just import the “Grade EXTRA” quality which are the best available.
Very much similar to the preceding batches – very good quality – the truffles are now verging on black, with an intense aroma – photo shows one truffle from exterior and one truffle sliced to show the inside colour.
We have selected 20g truffles as these work well for one very generous recipe (or two smaller recipes – though we recommend using your truffle as soon as you can as the aroma goes quite quickly).
Store your truffle in a fridge 0-4c in silver foil and use as soon as possible for your truffle to be at it’s best – ideally within a day or two.
Truffles don’t like heat, so it’s best grating truffle peelings (using a peeler or mandolin) over your main dish just prior to serving.
