Duck foie gras mi cuit with Jurançon wine – the result is a wonderfully textured foie gras with a perfect harmony between the foie gras and sweet white Jurancon wine.
Mi cuit foie gras do not require chilling during transit, but are then best stored in a fridge between 0 and 4°C to give them their full life (9 months).They can be preserved up to several months.
To get the best flavours, the “foie gras” has to be served chilled but not frozen. Take it out of the fridge and leave it at room temperature for about a quarter of an hour before holding out to your guests.
You will obtain perfect slices by cutting the foie gras with the help of a lyre, or a thin sharp knife dipped in hot water.
