Edouard Artzner Whole Duck Foie Gras Mi – Cuit Serves 4
A finely flavoured whole (“entier” in French) duck foie gras mi cuit of outstanding quality and one of our favourites.
Foie gras “mi cuit” are semi fresh (9 months chilled) and have a fuller more pronounced flavour than fully preserved foie gras in jars and generally more appreciated by connoisseurs.
Prepared by Edouard Artzner foie gras specialists in Strasbourg – a truly excellent foie gras also stocked by Harrods Food Hall which we take to be a good sign.
Best enjoyed in it’s most authentic way, served cool, but not cold, on finely sliced lightly toasted bread or French pain d’epices with a fig chutney and our delicious Sauternes wine jelly.
A few crystals of fleur de sel de Camargue sprinkled and ground black pepper over foie gras are another way of enjoying it.
